Why the processed meat is bad for you

  1. To maintain / red pink meat.

Nitrites and related compounds such as nitrate, are also in other foods. For example, nitrate found in relatively high levels in some vegetables and can even be beneficial to health ( 16 ).

However, nitrite is all the same. Nitrites in meat can be harmful N-nitroso compounds, the most widely studied are nitrosamines [4] ( 17 ).

Processed meat is the main food source of nitrosamines ( 18 ). Other sources are drinking contaminated water, smoke snuff, and salty condiments ( 17 , 19 ).

(Exposed to nitrosamines are formed mainly processed meat products at high temperatures (over 266 ° F or 130 ° C) because when frying or grilling sausages bacon 20 ).

Animal studies indicate that nitrosamines can play an important role in the development of colon cancer (to play 15 , 21 ).

This is demonstrated by human observational studies that nitrosamines may increase the risk of colorectal cancer (stomach and increase support 22 , 23 ).

PAHs are a large class of substances formed when organic material is burned.

They are converted in the air with smoke and accumulates on the surface of meat and smoked meat products (are grilled, fried or roasted over an open fire 25 , 26 ).

They may be formed from:

  • The burning of wood or coal.
  • Splashes of fat burning on a hot surface.
  • Burned or charred meat.

For this reason, smoked meat products in high PAH (be 27 , 25 ).

It is assumed that PAHs can certain harmful health effects of processed meat in.

Numerous animal studies have shown that some PAHs can cancer (cause 24 , 28 ).

Heterocyclic amines (HCA)
